If i'm in a crunch for a side dish that's healthy, here's one I LOVE and it takes about 2 seconds :) Okay, a little longer, but it's quick and easy.
Carrot Raisin Salad with Lemon & Garlic
Serves 2 to 3
5 large carrots (about 1 pound), peeled and shredded
1/3 cup raisins
1/4 cup finely chopped flat-leaf parsley
2 tablespoons fresh lemon juice
1 tablespoon extra-virgin olive oil
1 teaspoon honey or agave nectar
1 garlic clove, minced or finely grated
Sea salt, to taste

Toss all of the ingredients together in a large bowl. Serve right away, or refrigerate for up to 1 hour before serving.
